Guava arrived in Hawaii during the early stages of Western contact in the 1700s and quickly became one of the islands' most abundant fruits. Known for its tropical flavour and distinctive blend of tartness and sweetness, guava is enjoyed across Hawaii fresh, as juice, or as jellies and jams. In this form, it blends beautifully with the organic coconut milk and local cocoa (which already has an inherently tropical, fruity quality). The mouthfeel combines textures of creamy coconut, pulpy jam, and fudge-y chocolate. This tart, bittersweet profile is something I can't get enough of. So good!

Since 2010, Manoa has been crafting bean-to-bar chocolate, primarily working with Hawaiian-grown cocoa. The name "Mānoa" is derived from the Hawaiian word meaning solid, vast, and deep—a fitting representation of the company's commitment to quality and sustainability. By buying directly from local farmers, Manoa has established long-lasting relationships and, by cutting out intermediaries, pays much higher rates while providing hands-on support to the farmers. Their beans are grown on two principal house-run estates, but they collaborate with seven more across Hawaii. They have also developed a line called “Flavours of Hawaii,” which showcases locally grown ingredients that are deeply relevant to Hawaii’s society and cuisine, offering a taste of the islands' rich cultural and culinary heritage.
