Sweden's high per capita coffee consumption and vibrant specialty coffee scene inspired the creation of this bar. Standout combined the roasty yet fruity cacao from Öko Caribe in the Dominican Republic with a washed Gesha from Hugo Mariño in the Cusco region of Peru. These ingredients are roasted in Sweden by local roaster Johan & Nyström. The result is a strikingly bright flavour profile that showcases floral and fruity notes, alongside the tasteful tannins of the cocoa. There is no bitterness, astringency, or harsh acid from either the coffee or cocoa. This chocolate is balanced, beautiful, and marked with a delicious crème brûlée crust-like flavour.

Standout Chocolate is a one-man-band started in Sweden in 2018. Its founder, Fredrik, was an engineer in Sweden's automobile industry but held a growing passion for specialty coffee. Inspired, Fredrik created his own coffee advent calendar for Christmas, which garnered positive public response. Enjoying the art of curation, Fredrik sought to apply his engineering skills further. However, with Sweden already boasting many specialty roasters, he shifted his focus to the bean-to-bar movement. Fredrik has always sourced his cacao directly and exclusively from socially responsible cooperatives and prioritized environmentally friendly practices, utilizing biodegradable and compostable biofilm made from corn or potato starch for inner packaging, while the outer box is sourced from responsibly managed forests. True to their name, among the many bars I tasted during my early adventures with craft chocolate, Fredrik's bars consistently stood out the most, prompting me to immediately decide to carry and promote his creations.

Duarte, one of the Dominican Republic's 32 provinces, is located in the northeast and named after the country's founder. Part of the broader region known as "El Cibao," it boasts the highest levels of education, industry, and economic prosperity in the country. El Cibao is also considered the cultural heartland of the Dominican Republic, being the birthplace of Merengue music (the original folk type, known as perico ripiao, is still performed by local musical groups). The region hosts long-standing and historic carnival celebrations and the local accent is a unique blend, reflecting influences from 16th- and 17th-century Portuguese colonists and 18th-century Canarian settlers. Within El Cibao lies the Cordillera Central mountain range, home to the Caribbean's highest peak, Pico Duarte. The region is also blessed with two of the country's largest rivers which play a vital role in irrigating its agriculture. Furthermore, Duarte plays a crucial role in mining, boasting the largest gold mine in the Americas and the second-largest globally. It is also home to Öko-Caribe, a renowned cocoa supplier that works with local farmers and is known for its exceptional quality, high standards, and admirable business practices.
