Kablon Farms is a 70 hectare bio-diversified, sustainable farm in South Cotabato, in Davao, Philippines. The farm is owned by the Pantua family and the crop production is managed by the eldest sibling, Ernesto Pantua Jr. (who prefers to be called Jun). This bar is intricately wound with with both bitterness and acid, but its overall profile is far from intense and offers pleasant banana fudge flavours, a sprinkling of nutmeg, and delicate brown sugar-like sweetness.

Mark Wallace spent years working overseas with cocoa farmers in the West African jungle – a rare experience that sets him apart in the world of chocolate making. Upon returning to Victoria, Canada, he transitioned his deep knowledge of cacao into crafting fine specialty chocolate, all while maintaining his passion for supporting farmers and their communities. All of Mark's cocoa is directly sourced and transparently traded, with most also being organic, heirloom, and chemical input-free. He conducts thorough background research and due diligence on the labour and environmental practices of each supplier. Additionally, his packaging is compostable and recyclable. Another thing I love about Mark's approach is his dedication to showcasing the best of select cocoa-growing areas, highlighting quality over quantity by focusing on one special, intentional bar that's expressive of each region. He takes pride in expressing the flavours of the cocoa origins and shares detailed, often personal, accounts of the farms and growers.

Soccsksargen, previously known as Central Mindanao, is an administrative region located in the southwestern part of the Philippines. The region's name is an acronym representing its four provinces—South Cotabato, Cotabato, Sultan Kudarat, Sarangani—and one highly urbanized city, General Santos. Characterized by extensive coastlines, valleys, and mountain ranges, Soccsksargen is particularly notable for its intricate river system. It serves as the drainage basin of Mindanao, with the Cotabato Basin, a large depression bordered by mountain ranges on three sides, playing a central role. To the south of this basin lie the Tiruray Highlands, a moderately high mountain range that separates the basin from the southern coastline. The region's favourable climate and geography make it ideal for agriculture, gaining international recognition for its coffee beans, in particular.
