In 2020, a cluster of 80-year-old Gran Nativo Blanco cacao trees was rediscovered in a forest deep in the Yahuanduz area of Peru. That harvest yielded 90% white beans, making this one of the purest Piura Blanco bars in existence. Availability is very limited, with only one micro batch of 1 ton produced per year. The bar tastes as much like cacao fruit purée as it does roasted nibs; its tropical, fruity profile, which lacks any bitterness, makes it seem almost more cacao than chocolate. The mouthfeel is 10/10, providing a firm snap, a satisfyingly slow melt, and a lasting aftertaste. Notes of papaya, edible flowers, gooseberries, and mandarin beckon for quickly repeated, increasingly larger bites. Every element of this chocolate is flawlessly crafted.
