This bar is named after "Piura Blanco" cocoa, a rare variety with a unique genetic makeup that produces a high percentage of white beans. This cultivar grows only in the Sechura Desert in northern Peru, a unique area where a small, low-lying section of the mountains allows the Amazon jungle to overlap with the desert coast. This isolation has prevented interbreeding with other varieties for over 1,000 years. While typical cacao trees require tropical jungle climates, Piura cacao has remarkably adapted to the arid coastal conditions, thriving with lower humidity and much less water. Its tannin levels are lower too, as the trees face fewer threats from predators compared to those in the jungle. As a result, the chocolate's profile is lighter in intensity, with gooey, almost milky fudge notes. The beans' inherent fruitiness is also pronounced; producer notes of honey and passionfruit are spot on, and I would add dried dates, figs, and fresh-squeezed citrus to the list too. Qantu is physically based in Montreal, Canada, but its spiritual home is in Peru, where its founders, Elfi and Maxime, met and discovered their love for chocolate. It's also where they found inspiration for their name, taken from the country’s national flower (pronounced 'Kantu', from the Quechua language). Peru is also where the two source all their beans directly from cooperatives, importing them without any middlemen. Elfi and Maxime often visit the farms where possible, or meet with cooperatives in Lima to ensure good post-harvest and business practices. They also always sample the beans first to evaluate their quality and characteristics. Beans are important: Qantu's mission is to promote and preserve native cocoa beans. They educate people on the differences between hybrid and native cocoa beans and the importance of preserving native beans for biodiversity. The two have accumulated so much award bling you need to wear sunglasses when viewing their accolades!
