PISA (Produits des Iles SA) is an exporting company established by the Dufort family with the goal of supporting local growers and elevating Haitian cacao in global markets. They partner with around 1,500 smallholder farmers in Cap-Haïtien who, combined, cultivate roughly 975 hectares of organic-certified land to grow cocoa, coffee, bananas, and oranges. The beans include a diverse mix of Amazon Amelonado from Martinique, Ecuadorian Nacional, Venezuelan Criollo, Rio Caribe, and Trinidadian Trinitarios. When combined with Nordic milk, this bar develops a 'soft serve swirl' flavour profile with notes of vanilla and semi-sweet chocolate, complemented by hazelnut latte-like nuances. A hint of lactic tartness in the dairy adds extra depth to this already layered and seriously delicious bar.

Standout Chocolate is a one-man-band started in Sweden in 2018. Its founder, Fredrik, was an engineer in Sweden's automobile industry but held a growing passion for specialty coffee. Inspired, Fredrik created his own coffee advent calendar for Christmas, which garnered positive public response. Enjoying the art of curation, Fredrik sought to apply his engineering skills further. However, with Sweden already boasting many specialty roasters, he shifted his focus to the bean-to-bar movement. Fredrik has always sourced his cacao directly and exclusively from socially responsible cooperatives and prioritized environmentally friendly practices, utilizing biodegradable and compostable biofilm made from corn or potato starch for inner packaging, while the outer box is sourced from responsibly managed forests. True to their name, among the many bars I tasted during my early adventures with craft chocolate, Fredrik's bars consistently stood out the most, prompting me to immediately decide to carry and promote his creations.

It stands as Haiti's principal hub for historic landmarks, most notably the Citadelle Laferrière, a UNESCO World Heritage Site emblematic of the nation's independence. The city's picturesque bay, beaches, and historical sites have made it a popular resort destination, especially among Haiti's upper classes. The coastal setting enriches Cap-Haïtien's vibrant local cuisine, featuring fresh seafood and tropical fruits. Following the 2010 earthquake, which heavily impacted Port-au-Prince, Cap-Haïtien’s port became crucial for relief efforts, and the city's relatively undamaged infrastructure has attracted businesses and residents relocating from the capital.
